Smoked fresh hog leg

Needed to make room in the freezer got 2 of these legs was gonna cure it for a ham but decided to smoke it instead . Injected with apple juice and seasoning then rubbed her down and rest for 12 hr .


Put her on the WSM 22 at 10 last night , added coals at 6 am got to 180 after 14 hr . It turned out really good , got 5 bags of meat I kept one will give the rest away to friends , thanks for lookin !

Side table is great just a piece of conduit to extend the leg .



We skin the hogs after bleeding them out

Forgot to say these are no antibiotic hogs, just a little small to get on the truck , leftovers ;)
