Chicken cook

First time cooking chicken.  Made a mockery of spatchcocking by cutting down the breast side on one chicken...lol.  Just cut it in half after properly removing the backbone.   Screwed the other one up by cutting to far to the side of the backbone.  Said screw it...Brined overnight in water, salt, pepper, garlic salt and brown sugar.

Drained and then sprinkled with Weber Canadian Chicken seasoning.

Tried red potatoes again basted with olive oil, and salt and pepper.  Wrapped them in foil and put in drip pan.  Even cooking for an hour and a half, they were only 170 internal temp. Had to finish in the microwave  :-X

Anyway, used the baskets, Stubbs charcoal, and a dry drip pan.  Started the potatoes 15 minutes ahead of the chickens.  Put a few soaked apple chips on both sides about 45 minutes in.  Total cook time was about 1:20, and then I flipped them over the coals to try to crisp up the skin.

It turned out great and my wife grilled cabbage wedges with bacon on our gas grill....the chicken was so moist and tender.  The family loved it.

Looks good, brined is my method also, will look up spice not familiar with it.

We bought a big container of it a while back at Ollie's.  Apparently they don't make it anymore

I botched my first spatchcock too.  Was busy talking and started cutting the breast side with the shears...just ended up piecing it out.  When I do taters, I usually pre-cook for 4-5 mins in the microwave before seasoning and wrapping in foil for the grill.  If you like a little spice, give Weber's Kick'n Chicken seasoning a try.

The chicken looks great! For what it's worth don't waste your time soaking your wood chips or chunks, because all you are doing is getting the wood wet and smoldering wood is not good!
