Looks Grate, Irv!!!

So it bubbles along about 45 degrees difference from the lid temp?

Cool deal.....275 is a good all around temp for a lot of BBQ stuff....fatties, pork butt will go decently well there....'Turds maybe....even some folks will do their brisket around there.....

So have you noodled with the settings enough to know how much to go to shift 25f up or down?

(I'm assuming this is a fairly new to you gizmo?)

Yes its fairly new, when I first got it I run a test without food, and it has a dial on it that goes from 0-8 and I set it at 4 and it held 250 dome temp, don't know what grate temp was, on last nights cook I had it set on 6 and dome temp was about 320 and grate temp was 275 when I got this the directions said to close all vents except top and leave top open all the way, but I have better luck leaving bottom vent open about 1/4 in. so it don't snuff out fire and on the directions it says set the dial numbers for this temperature range ( 1-2 ) LOW  (3-4 ) MEDIUM ) 5-6 ) HIGH   hope this helps
