My smoked/braised pulled pork

Well, I gave it a go today after seeing some nice cooks on a different forum using a smoke/braise method shown on Triple D. What I liked about this is that it's a timed cook and not by temp.  Here it is.

Just before going into the braise cycle

Used the braise liquid as a sandwich dip and man was that good. Braise was an IPA, apple cider vinegar & water.

It was an 8lb pork shoulder from costco. Decided to give this method a go since it's a timed cook, only 8 hours. It's not by meat temp.

It's pretty simple. Cut up your pork to fist size chunks, cook for 3 hours then braise for 5. This is nice because I can schedule he finish time of the cook. Based on my first go at this method, you can use whatever you want for the braise liquid to flavor the meat. Mine had an IPA and vinegar taste. Here's the link. A couple others there have tried this method with great results. It also has the youtube link to the Triple D show that shoes this method for kalua pork sandwiches.
