Pork tenderloin with bacon weave
« on: July 16, 2014, 02:17:25 PM »
Not much to say, two pork tenderloins, silver skin and fat trimmed, weaved a pound of bacon, put some brown sugar on it, wrapped it up and threw it on the grill. Used 3/4 of a chimney, apple wood for smoke, took it to 140 in the middle, foiled for 10 minutes. Was very good, the ends were a little to overdone for me. Wife didn't mind. She likes her pork cook well.

Looks go to me. I'll eat that. Burnt ends?

Not really burnt, more like the brown sugar caramelizing. Next time I won't use the sugar.
