Those darned holiday leftovers

We had a ton of pork but left over from the 4th, so after a couple days of sandwiches and such, I decided it was time to get creative. I give you, Pulled Pork Fried Rice. Loaded with green and white onions and egg and soy sauce. I forgot carrots and peas but oh well.



Needless to say, we devoured what we could eat, then still had leftovers. It tasted even better the second day!

Looks great. The best part of holidays are the leftovers! I added pulled pork to pasta last night.

I've done that myself, more than a few times.......

Cook up some fried rice, then empty the fridge into the skillet and mix it up  ;D
