Stuffed Pork Tenderloin

I recently discovered this section of the forum and have been reading all the fantastic posts. Unreal some of the creations you guys come up with! Anyways I thought I would share a cook I did awhile back and had posted up on another site. I'm still a novice when it comes to anything other than steaks and burgers on the kettle so this is my summer to branch out a bit! (Pizza has been calling my name!)

I tried a Pork tenderloin lined with prosciutto then stuffed with brie, cherry and blueberry infused cranberries, chopped granny smith apple and a tiny bit of cinnamon.



Next I crushed up some salt and pepper seasoned pistachio nuts and mixed 1:1 with some breadcrumbs.



Coated with olive oil and crust - ready to go!








We kept things rather simple with some candied ginger carrots and some bacon and cheddar scalloped potatoes but man did it hit the spot!



I'll be making this recipe again for sure, served with a little warm apple sauce to finish things off :D Yum!

Dang, that looks great. Thanks for sharing! Although, I wish I was close enough so you could share a piece of that tenderloin.  ;)

Thanks, the meal definitely looks more fancy than it truly is! Super easy and I was pleasantly surprised at how well it all turned out.

Very nice looking.  Bet it is going to taste great.  I'm going to have to try stuffing one in the near future.
