I have some pork country style spare ribs I was going to cook today, but it's started raining. Cook or wait?  How does rain mess with slow cooking?  Any tips welcome!

Is it a torrential downpour of biblical proportions?

You may use a little more charcoal but why wait?

Grab a bar of soap and lets get to cooking.

OK I'm going for it. It has been raining hard, and lightning, but I'll grill just outside the garage so I can duck indoors.  Trying a new rub, Demon Pig sweet and spicy. Will try to post pics later.

Torrential rain. Moved chimney to covered porch so it wouldn't get wet while heating up.

Ok we're BBQing. Pre-cooked the country ribs for an hour at 350* wrapped in foil in the oven. Now plan 2 hours on the kettle. Not really sure what the temp is since the rain is probably cooling the dome thermometer. Put on 2 large chunks of hickory.  Everything looks good.  Still raining and thundering but not as hard.

Rain stopped, dome at 350*. Too hot. Closed bottom dampers.

Just wondering why the lid vent is closed?

Good job showing Mother Nature how its done.

Remember the scene from Forrest Gump where Lt. Dan is screaming from the mast of the ship?

Yep. that except grilling.

That picture is while the coals were in the chimney. Kept the vent closed to keep the rain out.

I pulled the ribs off earlier than I planned since the temp had been up to 350*. Finished them with Baby Ray's BBQ sauce. Glad I pulled them when I did, they're still nice and moist now. Much more and I think they'd have started to dry out. Served them with spinach and garbanzo bean salad.
