A Couple Maple Recipes

Production of maple syrup should be in full swing soon.  :) :) 8)

The recent issue of Costco Connection had a write-up, and 2 recipes.
We all know that most, if not all recipes can be adapted to the Weber kettle.
I haven't tried these yet. Somebody needs to give these a go.  :D

I like the chicken recipe.  But, instead of using chicken breasts, we're going to try it with quarters, which is what we like to do on the grill, whether it's the kettle or the gas grill.  I figure that instead of searing in the frying pan, I could place the pieces over direct heat for a few minutes, and then finish cooking them over indirect heat.

Quarters for sure ... My favourite! Chicken breasts can be somewhat bland. Adapt .. and, experiment!  :) :) ;)

Love maple syrup!  Thanks for sharing.  I am going to do the chicken breasts, only I think I will inject the marinade.  To cook I am thinking of searing both sides without the baste (to prevent burning), and then indirect heat/basting to the right internal temp.  Will give it a try this weekend and report back.

Injected the chicken with the marinade, put it in the mini WSM with some cherry wood. Cooked to 130 internal and the finished with direct medium heat. Thanks MacEggs, it is a winner. Everyone noticed the maple/orange flavor.
