Oh man this was a great meal Sunday. Pork loin, potatoes and asparagus. I used a store bought dry rub on the pork. The potatoes were brushed with olive oil and salt/pepper as were the asparagus. I used hickory chunks for the smoke for the potatoes and pork. The asparagus went on at the end and didn't get any extra smoke. Everything was great especially the potatoes. I'll never wrap them in foil again. These were so moist and I added a little bit of butter and feta cheese. They were perfect.

I'm with you. Potatoes, corn ... I want that char flavor where I can. (I do of course see the value in
partially
wrapping something, such as when wanting to incorporate butter or something else into a veggie that might fall out.)
