Decided to try a small pork shoulder (4.5lbs) on my new performer using the minion method and banking my coals on the side separated by two fire bricks. The cook took 10.5 hours to gwt to 190 degrees. Temps ranged between 230 - 270 and averaged 250.

The meat is currently resting but here are the pics.

I am not a collector, but I do have a small collection.

I love the smell of wood smoke and cooking meat...

Thanks guys. Yes, absolutely hooked now. I am just cooking for two so I may go to an 8 or 9 pounder and freeze some.

Other than having to adjust the vents to control heat this was very easy to do. I am ready to try something else now :)

BTW. It tasted as good as it looked.
