Tim Love (the guy doing this class) is based out of Fort Worth.  I've been to three of his restaurants, Love Shack (burgers), The Woodshed Smokehouse (Up scale BBQ), and his flagship Lonesome Dove Bistro (fine dining).

Burger shack had a cool vibe, but cruddy burgers IMHO.  The woodshed smokehouse felt like a BBQ joint that upper-middle class soccer moms love to go to for pulled pork sliders and fancy appetizers.  It was weird.  :P

Lonesome Dove Bistro was really cool though.  Very creative menu.  I had Rabbit-Rattle Snake Sausage and Elk Sliders with seared foie-gras for starters.  Then I had a garlic stuffed beef tenderloin for dinner and my partner had grilled quail.  It was really good!  And really expensive!

It's cool he is putting on a class down in Austin.  I've never heard of him doing one up here.  Haven't looked too hard though.  Might have to start poking around.   ;D

I've never seen someone put skirt steak, or any type of meat directly onto the coals. 
Looks like it would have been a good time though!
