Start it the night before, foil and cooler it when it’s done. It will still be hot at noon.

I love these threads too. I've got two butts about done that will be going on vacation with me next week... I think I'll try the vacuum bag freeze deal.

Plus 1 on the pulled pork, the brisket is demanding.  I would do your butts much in advance tho.  Some take much longer to cook than others. You want it done, when you need it done.
