That is beautiful. How are the pieces joined?  Did you have to plane the whole thing?

Joined with wood glue, they're all made that way. Ran the individual pieces through the jointer and planer. Also ran the finished piece through the planer. Will give it a few coats of mineral oil, then a final coat of butcher block conditioner.

Great work.  I was given an older cutting board that my F-i-L made about 40 years ago.
Any tips on how to restore one?

On restoring one: If it's structurally sound and has no major problems, you could just sand it a bunch, going from rough to smooth, and then give it a few coats of mineral oil, then butcher block conditioner.

If it has mild problems on the surface, you could run it through a planer first. If you don't have a planer, find a cabinet-maker or woodworker who has one -- they'd probably give it a few passes at no cost, or very little cost.

If it has bigger problems, like coming apart at a glue joint or two, it might need to be cut apart at those spots with a table saw, then reglued.

Lets just say I have acquired a few Kettles.  Big and small.   Vintage and New...  Some say I have a problem.  I find the Kettle, buy the Kettle, USE the Kettle...No problem...
