Beef Jerky on the WSM

I have been wanting to give this a try for quite some time.

Top Round Roast.


The marinade.  There was also some SBR BBQ Sauce mixed in.


Overnight.


Loaded up.


On to the 18 WSM with KBB and some hickory for flavor.


After 6.5 hours at 165-170.


All done.


This came out great, can't wait to do it again.  Thanks for looking.

You make it look easy. I've never made jerky.
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch

Yum! How was the texture since you didn't technically dehydrate it like typical jerky? I bet this is more chewy and delicious.

It was more chewy, texture was just right.  You didn't have to pull real hard like some jerky.

Got a meat slicer? I wouldn't have the patience to get them thin enough.

No, I threw it in the freezer for a couple of hours and then used my 14" BBQ knife.

I asked, unfortunately the "butcher" at Kroger was a 22 year old that told me they could not cut anything that was already packaged.

I haven't made any or tried to have some sliced in ages. I might suffer a similar fate when I try next at the major stores.
