Tried running the slow n sear over night last night. I admit I did wake up a few times to check the temps and amazingly they stayed fine. Spiked at 260 but held mostly around 230. Ran that way for over 12hrs. Disclaimer I did fill the slow n sear plus piled up charcoal on one side as high as it would go. Had to add more near the end of the cook. Pulled it at 203. Came out great. Family loved it.
