Bacon and cheese

Both going today. I got Gouda cheese smoking with applewood in the 18" and makin bacon in the 22" with pecan.

Lookin good!!   What Bacon recipe did you use?   I had my first attempt at bacon last week in my 22".   Let's just say there's a reason I didn't post up a cook thread.
