This is the Weber Smoke House/WSH. I needed a smoker that can smoke small amounts of fish, maybe only 1-2 at a time. Small batches allow me to play with various flavors instead of smoking all of it with one smoke & brine flavor.
I used a 18" WSM and a 22" kettle and joined them with some 1" wood stove gasket.
The grate is set up with 5 levels. They can all be loaded, handeled, and stacked separately with the current design.
Got it lightly loaded and ready to go.
Some pics from the two batches smoked so far.

@ hell fire grill So I can't tell from the pics is the bottom cut out of the kettle or dose the smoke just go through the vent holes ?

Thanks but I was thinking 12" wheels for the rough terrain in my old beat down gravel driveway. It aint going far with the kettle sitting on there. But I do just happen to have some Weber wheels laying around...

The bottom is still on the kettle, this one anyways. I tried it with a bottomless kettle that donated parts to another relic. Without the bottom of the kettle on there the heat wasn't diffused well enough to do a proper smoke job. The kettle I used is a C code 3 wheeler thats seen some R&D over the years. Its been torch cut, patched, screwed, welded, rusted out, thrown out, reused, abused, caught on fire, dropped...and now its a cold smoker for a while.
It'll smoke 125* for 12 hours without a problem.
