WSM Round One

Tonight is my first go at a WSM smoke and my first ever overnight cook! I hope I've read enough threads here. On deck for this first round will be 2-10 pound bone in butts, 2 racks of St. Louis ribs, 2 bone in chicken breasts, a pork loin, bacon, hard boiled eggs and bacon wrapped poppers. As they say go big or go home. If I'm lucky there will be at least 5 folks here to help me eat all this. The whole time getting all this set up we've been listening to some great music and smoking fantastic cigars and sipping on wonderful rum so even if it all goes to hell we will still have had a great afternoon and evening.

What would be a wonderful sipping rum? I am a beer or whiskey/whisky guy myself.

210°/149° at 4 am. Added everything else.
Not very good pics but it is 4 in the morning. Better ones to follow.

It got really cold out last night and drove the temp down to 200° for maybe 4 hours, a quick rake over the coals and vent adjustment and it came back up. The butts seem to have just came of a stall. Sitting at 171°/239°.

This was the longest cook of my life (so far). 18 hours! Everything turned out fine but there were a few upsets through out the night.
Other than a few times my exhaust hood couldn't keep up. But hopefully the pics below will show how much fun we had.
I made way too much food but it was a great learning experiment for my first day with the WSM. Looking forward to round two.

We were sipping Pyrat XO and Matusalem rum.

Wow, grate cookup! I'm not much of a rum drinker but like Matusalem, it's a good one that doesn't cost a lot. Best I ever had was one of the higher end Flor de Caña, so smooth and just on a totally different level from any other I've had, but all I typically ever see in stores is the cheap silver which is not worth the effort.
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch

I cook on: Backwoods Gater, Lang 36, Hunsaker Smokers, Pellet Pro 22" WSM, BGE's, WSM's, Cajun Bandits, PK Grills, Drum Smokers, Genesis Silver C, Weber Q's, Cookshack 008, Little Chief, La Caja China #2, Lodge Sportsman...oh yeah! Weber Kettles! Kamado restoration and pit modification hack!
