Smokey Mac'n'Cheese... Finally!

I have no idea why this took me so long to make considering all the great variations posted here almost weekly! - Plus I love me some Mac'n'Cheese 8)

Thanks to @Idahawk for the base recipe... I modified it a bit by adding bacon and some bonus cheese in there. I also used @1buckie's idea of the crushed up cheeto's as a final crust for the top - Genius idea!

Here's my offering...

Melted butter, touch of Cayenne, flour
Whole pack of Bacon
Whole pack of pre-shredded tex-mex
Whole pack of pre-shredded 3 cheddar blend
Cheeto Dust Crust
Parmesan Sprinkled up top

... Voila!





















We chowed our faces off and sent a big pack home with the in-laws. I even got a text message later from the MIL saying it was excellent!

seems it worked pretty well.....I've had a little trouble before trying pre-shredded cheeses, but it look just peachy (or cheesey, I guess)

Hot diggity dang! I've also had trouble with pre-shredded but glad it worked out, that looks amazing.

Nice looking mac n cheese.  This is one dish that really takes the smoke well.  We've done it a bunch of times and it always comes out great.

I've been wanting to get around to doing this, too.  Yours looks delicious!

BTW, in your initial "offering" with the breakdown, no mention of mac ... How much did you use pre-cooked?
