Sunday dinner
« on: June 08, 2014, 02:38:58 PM »
The daughter in law and my little buddy came over today for a while.
I told Luke we were going to fire up the grill, and he smiled pointed to the grills in the garage and said, "Papa."

It looked like rain so I prepped everything inside.

Fired up the chimney and made all the neighbors jealous.

While the Performer was warming up I started the Spirit and started rendering some bacon for my Pirate baked beans.

Just about the time I started saucing the ribs I put on a few ears of corn.
I think it was the first time in 40 some years of grilling that I got my corn on the cob to come out perfect.

All in all everything came out great.

I don't keep secrets.
Here is my Pirate Baked bean recipe.

2 or 3 slices of bacon medium chop
1 16oz, or around that size can of store brand regular baked beans.
1 Jalapeno fine chop
1 good sized onion fine chop
3 cloves garlic minced
1/4 cup of your favorite barbecue sauce
1/4 cup Captain Morgan's Black spiced rum (I know, the picture shows CM 100.  I ran out of black the night before :-[)

In a cast iron skillet render the bacon
Once the bacon starts loosing it's fat add the Jalapeno, onion, and garlic.
Cook this till the onions start to become translucent.
Remove from heat, and add the can of beans, the barbecue sauce, and the rum.
Stir this all together and place on grill uncovered indirect.
Cook stirring occasionally until the sauce starts to thicken.
Remove from heat and serve with whatever.

I like using pecan or alder wood while cooking this, but you can use any wood you like to smoke with.  Mesquite is a bit strong.

Why yes they are.  That's one of my favorite dinners.

It is Yuengling BBQ sauce.  I could drink this with a straw.  I'm going to spend the summer trying to copycat it.

Awesome. I didn't know they made a sauce. Surprising that I haven't seen it since I'm pretty local to Yuengling.
