Father's Day
« on: June 21, 2013, 02:21:26 PM »
Here are my cooks from Father's day weekend. Only seen here on WKC!

Look how hot it is down here!

We were in and out of the pool all weekend. Awesome way to cool off. That's my dad cooling off there.

This started as a whole beef tenderloin, forgot to get pics! But I trimmed it, sliced it into filet mignon medalions and wrapped in bacon. Then spread alittle warm butter and and horseradish  on both sides. It was 3 parts butter to 2 parts horseradish. Some salt and pepper and let them come to room temp.

While we shucked some home grown florida corn.

And got the grill going. With some ice and cold beverages to help stay cooled off!

Beef meets the heat. With some mesquite chunks.

And let rest for a short time. Don't they look good!

Let's Eat!

Daisy's first corn on the cob, didn't take her long to figure it out.

I also had a size-able chunk off the end of the tenderloin that was grilled and sliced. Filet's were a hit!

The next day I cooked ribs on my dad's old oklahoma Joe offset.

Works pretty dang well and had plenty of room.

Smoked with some pecan mini logs, this thing used a whole 15 lb bag of charcoal in 6 hours. Added another chimney of unlit every 2 hours. So twice if your counting. But it rocked solid at 260-275 without any adjustments.

I was able to lay in the pool and drink beer most of the time, again, sorry no pics of that.

Sauced them with some Sweet Baby Ray's and they were good! Set them in front of the family and they disappeared.

Thanks for looking.

Like the idea of pre-baste on the  wraps, saves fiddlin' around later, flavor's already baked in !!!!!

Ribs are way happinin' too !!!!

BTW, that's too hot for my Canuck blood. Keep it in the 70s, and I do just fine.  8) :o 8)
