First low n slow on the 14.5 WSM. So fun and simple. Ran 238 for like 45 mins. Honestly I thought my thermometer was broken, it was just that steady. Wrapped around 160. Pulled at 203, rested in cooler for about an hour. Love beef ribs, though these didnt have a ton of meat. All good though, only used 1 full chimney total. BnB charcoal. Grate day!
