I had some birdseye maple and reproduced about a dozen sets of handles and was wondering what kind of finish to use. I see alot of Helmsman spar finish users.

Helmsman Spar Urethane will hold up very well. I used some on my outdoor SS table that has wooden legs. Still looks great!

I highly recommend applying tung oil first to help seal-up the wood.
It will also bring out the natural grain and colour. 

Let that do its thing for 24 hours, then apply a couple three coats of spar varnish or spar urethane. YMMV
