First time pulled pork.... Finally!

LOL....  I was out sneaking around the back yard this morning too. Finished up two butts. They were pulled off the grill and put into foil and inside the cooler at ~1:30am for a 2 hr rest. Finished shredding the pork at 4am and went to bead.

Well it was a success. First butt came off after 8 hours and second one came off at 12.5 hours. I think the probe in the second one was too close to the bone so the temp never hit the intended 203 degrees. Both stalled for 2 - 3 hours. Everyone loved it and we have a ton of leftovers.

Lots of options...

Obviously BBQ Pork sandwiches.

Beyond that though...you can chunk/chop the pan fry and make crispy pork tacos (similar to carnitas).

Use the meat and make enchiladas. It will add a depth of flavor not found using braised meat.

Or our favorite is Mike Mills BBQ Spaghetti. Basically its pasta with a bbq/red sauce combination and pulled pork instead of meat balls. It's sounds weird. But seriously, I've learned to make nothing short of a double batch as to make my wife happy. You don't have to use spaghetti noodles either...I usually use something smaller like Penne Ziti Rigate or Gemelli. It's delicious!
