@MacEggs luckily for me my wive prefers hers erroring on the rare side, actually Pittsburgh rare

@JEBIV , I had to look-up Pittsburgh rare.  Yeah, these were very close to that, for sure.
Did steak 10 days ago using only lump, and cooked them the same way.
My wife only scraped-off the brown part of the steak.  I had a good laugh.  I ate all of mine.

No sous-vide is required for a perfect steak.   :D :D
