Pulled pork enchiladas

Used the meat from the butt I cooked from 10-28-17 post to make pulled pork enchiladas.  Simple to prepare.  I used flour tortillas.  Added a portion of meat some cheese and a little bit of sauce.  lined them up in a Pyrex dish and then covered with more sauce and cheese.  The sauce was just El Pato (the yellow can).  They just needed baked till they were bubbling and the cheese was melted.  For that I used my stacker on my crimson as an oven.  Did not want to heat up the kitchen for it is still around 90 degrees outside.  Cooked them around 400F.  The flavor is amazing.  The nice heat in the sauce combined with the smokiness of the pulled pork is outstanding...awesome flavor!  Try it sometime.

Is it just me, or does pulled pork lend itself to all sorts of things after the fact? When I do beef or chicken, the seasonings always seem to be needed for the particular intended final dish and then don't translate to another type of flavor dish.
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch

I wasn't too sure about pulled pork in tacos when it was the only meat option we had. We heated the pork in the bag in hot water, made the tacos and they were damn good!  Smoked pork is probably good anytime on anything.

Very nice...
I have used PP in tacos and burritos but for some reason I always go for beef in enchiladas...
I guess it's time to change that...

I love left over pulled pork.   Nachos are really good
, tacos are good . And now this is on my next list of things to try .... looks really good .

Try angel hair (heavy garlic) spaghetti.....mixed w/ leftover pulled pork sometime.....I did & couldn't stop eating 'till it was gone.... :o

Wow!  That looks really good.  I'm going to start doing baked dishes when my new limited edition red arrives.
