SPATCHCOCK CHICKEN

Took a whole chicken seasoned with a Greek seasoning I found at the grocery store. Smoked indirect for about an hour and then grilled over the coals and applewood. I jacked up the temp to about 400 to cook hot and fast. Was really happy with the results.

Did you grill over direct heat for the entire cook, or indirect as well?
Gotta love them yard birds!

I did indirect for about an hour. The I grilled both sides. Once I got the skin nice and crispy, I put it off to the side and let it cook indirect the rest of the way. With the heat being at 400 degrees, it cooked in about two hours.
