A few recent cooks

Brats!

After I seared these well I dropped them in that bath tub to finish up.



Brined leg with bite through skin. I made six of these, and rubbed them with Wolfe Rub original. I used mesquite for smoke.



Brined beef ribs. These were cut the opposite way. I used red oak on these.







Al Pastor (seasoned pork with pineapple)



On corn tortillas with fresh salsa.
