Grilled Macaroni and Cheese Balls

2 cups of your favorite Mac and cheese. Room temp
1-2 cups flour
2-3 eggs
2-3 cups bread crumbs
Bacon , jalapeƱos, tiny shrimp, diced ham ???
Cooking spray

For about 10 balls

Take 2 cups of your mac and cheese and put in the freezer for about 20 minutes .
While that's in the freezer
Set up a dredge station of flour , eggs lightly beaten, breadcrumbs

After you pull the mixture out of the freezer.
Spray you hands with cooking spray and form Mac and cheese into tight golf ball size balls.


Now dredge in flour, then egg , then press into breadcrumbs coating completely.
I then spray them lightly with cooking spray to help set the crust
( you can make ahead of time and keep in the fridge )

Grill for about 10 minutes per side or 20 minutes total at 425 with an indirect set up .
Let cool about 10 minutes, serve plain or with dips of you choice .

Notes
If your in a hurry boxed or packaged Mac and cheese works great , I use a 50/50 mix of milk to water when I use the boxed kind,


For bread crumbs I like a fine/course mixture, I make my own.
Use a hearty bread , cut into 1/2 pieces, spray with cooking spray and season to your liking , bake or grill at 250 for 15-20 minutes, cool and break into crumbs.

I season the flour with a little Lawrys


If you add canned shrimp or jalapeƱo drain the liquid first .

Well, we had a bit of an issue getting them into balls.  We used a Mac and cheese with the cheese pouch...thinking that might have something to do with it.

Maybe add just a little breadcrumb INTO the mac 'n' cheese to firm it up?

That might help.  I'm going to try it again tomorrow.  The Mac and cheese addicts demand to eat .  Can't tease with Mac and cheese!

Did you freeze it for 20 minutes until it was really firm , I'm mean partially frozen to the pan on the bottom ? also try adding a 1/2 cup of real cheese or more to your mix , again creamy but not runny , they should form like balls of clay after the freezer .  Also Keep your mix in the freezer and do a few at a time so it stays cold , the high heat on the grill sets these , to much liquid and it boils inside and they pop.

Yes.  It was in the freezer for about 30 min...but it went from the pot after cooking to the freezer.  Maybe need some more time.  I will try again tomorrow.  This one will be a hit!
