Turkey fatty on the Mini-WSM

Did a turkey fatty on the mini today after doing one Thanksgiving that turned out great!  Didn't let this go as long (165 vs 190) Was sorta dry with out gravy, even with bacon.  What can i do to add moisture to the turkey? So on to the cast!



Wanted: 18" Platinum any color will work
This is my Kettle there are many like it but this one is mine......

The wife makes a killer mixup for turkey meatloaf, sometimes oven baked, sometimes I'll hickory smoke it.......

Ground turkey by itself will dry out so turkey sausage is de-cased & added  abt. a 60 / 40 mix, I believe.....
You could also add a minimal amount of chicken stock or a light olive oil, but just a bit 'cause if you overdo it the stuff will be too hard to work with.....

The stuffing we got at Sprouts, it is organic stuffing that comes in a bag, don't know right off the brand, Wife bought it.  We added sage to it and put french fried onions in it also.
