TdF Brisket!

It was going to be Independence Day brisket, but I didn't get around to it yesterday. Today is the first stage of the Tour de France so I'm celebrating that.



Here it is about 3 hours in and it has a while to go. The WSM has been holding within a couple degrees of 275°F with no fuss, no muss.

The big piece is ready to wrap. The smaller piece (on the bottom rack) was wrapped earlier and is ready to come off and rest. 6 hours into the cook! Going fast today.

Possibly my best brisket yet. The cut pieces are strong enough to support their own weight but pull apart easily. And cut with a fork easily. And taste out of this world!

This is why I smoke. :D

It's like the gift that keeps on giving. I froze some in Foodsaver bags and we're still working on the leftovers. We'll have some for dinner and this time I've grated some fresh horseradish to go with. :D
