Hi all. Took the Weber Kettle on its first low and slow smoking session this past weekend with some beef short ribs. While I was nervous, the kettle did a great job sitting between 225-275 basically the whole time I was cooking. I have a slow'n'sear and I didn't even use a whole chimney of briquettes. Wrapped them at 165 in butchers paper, then pulled them at 205. Rich and tasty, super tender, smokey but not too smokey. Absolutely would do again.

Those look really good, lots of meat on those! Caprese salad looks really good too - one of my wife's favorites.
