Father's Day Short Ribs

A little Father's Day treat, I smoked some beef plate short ribs Sunday, and they did not disappoint.

My 10 month old was excited and got me up at 6:00 so I could get the fire going (ok this is just her everyday wake up time).  Regardless I set up the Slow and Sear with KBB and a few chunks of apple wood, got it up to temp and had the ribs on at 7:15.

The ribs just needed a trim, rub with canola oil and kosher salt and pepper.  The kettle was dialed in around 250 and 6 hours later they were ready to take off, the hardest part of the whole cook is letting them rest before slicing in.

They came out great and it was a lot of fun, I certainly need to cook this one again.
