Nice to see that three racks fit. Did you have to keep flipping them to keep that inner one from not cooking too fast or did the water keep the temp okay? When I got my SNS I ran my Thermapen across the cooking grate right to the water and same temp across. Were those foils or naked?

i actually used a rib rack for the cook and then I brush some bbq sauce on em and put em over the coals..the picture was at the end after i took em off the rack..sorry for the confusion.
