You forgot the "fish on the grill" shots. :( They came out marvelous though. What kind of fish did you use?

I used haddock.  Wanted mahi but it did not look that good.  Maybe next time.  The fish was thin so i wrapped it in foil with some compound butter and thin lime slices.  It came out good!

Yes, the grill is a modified OTS.  Bought a black OTG off craigslist for 25 bucks, stole the parts, then sold it as a OTS for 30.  I love when a modification pays for itself.

I am craving fish tacos even more after making them.  It was a first attempt, so lately I have just been thinking of different ways to make them the second time.  And thinking of food constantly makes me hungry.

The second version will be a thicker cut of fish, probably the mahi, and it will not be foiled, but grilled over the coals.  I may also toast the tortillas a bit too.

Inspired by your cook, I did fish tacos last night. (That and avocados were 3/$1  ;) ) After seasoning the fish, I dipped them in just barely melted butter and stuck them back in the refrigerator. This way they carried plenty of the butter on to the griddle. I then grilled them on a couple tortilla griddles over the coals. I threw on a couple chinks of cherry and walnut for some smoke. They came out pretty good.
