Title: Marinated Skirt Steak Tacos on the Summit

Been too long since we've had this and it was quite a treat!  Steaks marinated in a mix of olive oil, soy sauce, garlic, brown sugar, diced shallots, lime juice, salt, pepper and red pepper flakes for about 6 hours.  Hot and fast over hot lump, then sliced against the grain.  Added mexican crumble cheese, sliced avocado, onion, tomato, orange bell peppers, cilantro and sour cream for some pretty good Sunday dinner.  Leftovers today for lunch were equally good.  Beaux had his own steak which made him pretty happy.

Oh, Bud got a new umbrella this weekend too... ; )
