Title: Stuffed Chops

I'm up in NC visiting my daughter and family for one of my grandson's birthdays and, of course, I get the privilege of grilling at least once.

Picked up some nice, this, bone in chops on sale at Publix ($4.99 lb.) and stuffed them with a mixture of bacon, spinach, and whole milk Mozzarella.  I also grilled some carrots and and glazed them in a Balsamic reduction.  Finally, instead of taters, got some 5-cheese tortellini.  I had trimmed some excess fat off the chops and rendered those down into nice little crispy bits.  That, and the fresh pork fat went with the torts.

That looks great, love the idea with the fat. Quick question, are the carrots "crispy" or do you boil first? If not do you fully cook them on the grill?
