Been enjoying cooking on the kamado lately and thought I'd share.....
Marinated in olive oil, salt, pepper, lemon juice, minced garlic, soy sauce, dijon mustard, parsley, thyme and brown sugar for two hours then grilled over high heat using lump charcoal on the kamado joe c3 to 145F, rested to 152F.
These did not disappoint!
