Found a couple of packs of Beef Tenderloin Tips at Publix the other day for $12.99 lb. I also had this recipe, from Steven Raichlen for Crab Rangoon Stuffed Mushrooms that I'd been sitting on for a couple of months and thought, "How about a little Shish-Cabob Surf 'b Turf?" Just to round it out a grabbed some corn and thawed out pork tenderloin to add a little variety to the mix.

I followed Steven's recipe with one exception. I did not try to do the fried wanton wrappers and instead just topped the mushrooms with additional Panko for that added crunch.

My S-i-L does not like mushrooms, so I stuffed some of the pepper tops for him.

Once they were done I popped them in a slow oven to stay warm while I moved onto the Main Event.

I had soooo much that I ran out of the metal skewers, thankfully we had plenty of wooden ones for the overload.

Looks very tasty and fun to make! I'm always looking for interesting ways to make stuffed mushrooms. This may be the ticket!
