Title: First deer cook on the 18"

First time I've tried smoking deer and I was very happy with the results. Total cook time 4 and half hrs @ 225 degrees. 3hr smoke and 1.5hr wrapped in foil.

What part of the deer? I haven't had deer venison for many years. Miss it badly. I've had elk, so that helped. Looks great.

I was afraid to mess it up since it was my first go at it but I was happy with the result.

I usually just grill bacon wrapped back straps, but never thought of smoking the hind quarters. I have some venison in the freezer and will have to give it a try.

About 70-80% of my venison is ground into burger or made into summer sausage. We liked deep fried nuggets too.. yummy if done right and not over cooked.

Did you inject the meat, prior to smoking?

I didn't inject it, but I did leave it in a brine over night.
