That's interesting. It looks like the beef equivalent of spare ribs. I've never seen them 'round here. I think they usually get cut up as short ribs. It looks good! How long did you smoke it and how did you like it?
:o! Awesome looking Flintstone ribs Golly! I guess you were feeli'n meaty! Please share the "Mad Hunkys" recipe.
Those are some serious ribs!! 8)
Ok golly those look great! Now do you treat them any different than pork ribs when cooking? Are we looking for the same aspects when they pull back from the bone and bend test? What about smoke, does one tend to be better for beef or personal preference? Sorry for the list of questions lol I haven't cooked them before.
"my kettle is more powerful it will do almost anything."
Those ribs look great Dave! They look really moist! Top result. What did you smoke them with? I did mine with a mix of cherry and hickory.
$60 for a WSM? I wish I could find one for that price. :)
I think the ribs might be the 'plate' cut in the US, maybe back ribs?
Mad Hunky is a brand, the Mad Hunky is Rich Tirpak - is it okay to post a link to the Mad Hunky site? If you buy something from him tell him Ken (from Australia ;-)) sent you his way.
Ken
