Honorable Mention: The humble Slide-Aside is an underrated accessory, imo. It makes it easy to deal with the lid during the cook. No need to carefully make sure the lid hook IS hooked on the side of the bowl. It gives full grate access and doesn't interfere when the lid is on.
1. Kingsford Matchlight Charcoal: I am mainly a "Griller" in which it lights-up in around 20 minutes and when fully-lit no fowl aftertaste . Also, no Chimney is necessary.
2 SlowNSear Plus: Easy set-up in using both lump and briquette charcoal.

Good quality foil cause you can make almost any accessories with foil!
Don't get me wrong I have lots of accessories , baskets, CI and SS grates, gbs, and so on, but every time I cook on someone else's kettle or a travel grill, we make due with those essentials and it is fantastic!
Probably the most useful expensive accessories for me is the CB stacker. It is great for large and small smoking sessions and also works as a Santa Maria or open fire pit.

Cajun Bandit stacker (smoker conversion)
I changed from a barrel offset smoker to the kettle but like to smoke & slow cook some things. It includes a fire ring which, used with the Weber baskets gives me loong smoke times because I can lay a maize of coals, not just a single snake.

Always wanted to try one but the offset barrel didn't have the ability. Now I'm hooked.

What an extremely difficult question...But also a fun topic! It depends on what I'm grilling as to what my favs are. And I guess for this discussion, I must leave out the WSM stuff which is a fairly long list for this gadget guy.
So, for the Kettle.....
1. Slow n Sear 2.0 with SS drip n griddle. It protects the porcelain bowl coating, provides two zone cooking and turns a regular kettle into a low and slow smoker. The pan directs airflow and allows for easy clean-up.
2. Maverick XR-50 thermometer with 4 probes. Allows me to monitor internal meat temps, grate temps and even ambient temp if I want. I can't believe I grilled for all these years without one.
3. Latest addition - the vortex. I've cooked wings, legs and thighs with this and have results that I've never achieved with regular baskets. Plus it gives me a reason to use the silly gourmet grate system which I really didn't use before. I'm sure many people cook amazing chicken other ways, but this is a fun, easy way to do it that works for me.
I've got many other items that I actually use more than these like charcoal tongs, chimney, hot gloves and probe thermometer that I really couldn't do without, but I consider those to be necessities and not really accessories.

2. The Weber Charcoal chimneys...I have two, and when I'm in a hurry, I stack them for even faster lighting.
3. And I'm going to say my performer. Even when I'm not using that grill...It's a table, it's my storage bin, when I'm in a real hurry it's a lighter for another grill.
Honorable mention to the slow and sear...I've only had it a few months, it's great, but I'm find I'm preferring it for searing rather than low and slow.
1: Charcoal baskets (I'm going to lump all of them into this one SnS, Bigger Better Basket mod, Vortex - any way to hold your charcoal and protect your grill.
2: BBQ Dragon fan: I love this thing to get coals going faster - I typically start with 1/2 a chimney of fresh coals get that going then put used coals on top to make a nice even bed of coals - I put the fan on to get then whole thing ashed over. I'm not always patent enough with coals.
3: Meater meat probes: I love these things for smoking - since they are wireless I'm don't have to worry about messing with wires and they are two probes in one - meat and pit temp. I don't have a rotisserie yet but I'm looking forward to trying them out with one. The app also keeps track of your cook so you can go back and look to see how long things took you etc.
Tier 1 (must haves) for me: Weber chimney, killa grilla grate (no more rusty grates...ever), thermapen (a must for nailing the temps)
Tier 2 : SnS (never leaves my kettle), slide aside (only removed for roti cooks), roti (indispensable for whole chicken and turkey)
Tier 3: pizza que (love using it but making pizza is a lot of work)

In no particular order: Thermopop, because I hate trying to guess when the food is cooked to the right degree; Killa Grilla stainless steel grate, because rust is so 1980's; and my giant, heavy duty spatula, because it makes handling a finished pork butt so much easier (I haven't dropped one yet). I didn't include the Weber chimney because I consider it a necessity more than an accessory.

2- Chimney -- Ease of starting my charcoal with consistent starting times.
3- Rotisserie --Turkey's, chickens and roasts are unbelievably moist due to the self basting qualities of a rotisserie. I have also added a shish kabob accessory that attaches to my rotisserie. A
rotisserie is the one accessory that the results cannot be replicated without using one.

Matchlight?????? Don't say that man. lol. 20 minutes? It takes me less time to get my non-fluid soaked briquettes ready to cook. Chimney should be #1 answer to this question for every person. Sorry my man.
This list is different for a couple of different situations. One list is the top 3 things someone needs when they get a Kettle.
1. Chimney. I have both the large and small Weber chimneys. Gotta have them.
2. Char Baskets
3. Good set of heavy gauge, stainless steel, box framed tongs, that have flat inside surface heads on them. This set of tongs is for charcoal, char basket, and grate use only. Get a set that is strong enough to lift an entire 22" grate with one hand with them. They never touch food, only used for grill and charcoal management. Make sure they are hinged at the back and not just the bent over clamshell style crap tongs you see in most BBQ grilling tool sets. I have a set of indestructible tongs just like I described that I received as a wedding gift for my first marriage in 2000. So, here soon the tongs will be old enough to drink. Since that time I have been searching for the holy grail of tongs to replace them so that I'm not left without if these disappear. They stay hanging on the grill at all times and I never wash them because they never touch food.
Those are the necessities. Tier 2 of necessities:
1. Some form of instant read or multiple probe thermometer
2. Heavy leather gloves
3. Some form of propane assist to start your chimney. I have a 1999 model SS Performer so I have the gas assist. But, prior to that I used the side burner on my Genesis to light all my chimneys. For folks that have asked my assistance in getting started in the Kettle world, if those two options aren't available, I suggest a small Coleman camp burner to use for starting chimneys.

To me this list of 6 things should actually be a starter kit. People that aren't using these items will not have as easy of a time using charcoal as they could be.
1) Weber 80728 22" stainless hinged grate. No more rusty grates that need replacing every year.
2) Weber charcoal grilling table 7445. Small packable table that locks the grill in.
3) Vortex/SlownSear. Being able to contain an entire chimney of charcoal is more beneficial than the standard baskets for most cooks.

Well this is a tough question since I haven't use everything yet. Thermapen for sure is there; I have used that. I've also used the chimney, which is great. I also have Weber 6535 Grilling Gloves, which saves the hair from being singed on my hands.
With all of that being said, I haven't used the SnS, the SnS griddle/drip tray, nor the vortex. Actually, today I receive on of those cookie sheets with a wire rack, so I can dry brine chicken in combo with the vortex. I also have the thermasmoke which I haven't used yet. So in short, my list is fluid! :)
1. rotisserie- easy, self basting, top notch results always, fun to watch
2. Auro Kettle zone - versatile, low and slow perfection teamed with a snake, easy adjusted during cooks

Weber Chimney. - Because it works so well.
Grill Grates - So I can do almost all my cooks over direct. Makes the burn better for me as the coals don't get as wet.

2) Slow "N Sear - "because two zones are better than one". Great for direct, indirect, searing, roasting.
3) Thermapen - accurate, easy, and quick way to check internal meat temps.

2) Inkbird 2 probe BT thermometer. Gotta know the correct temps.

You won't be sorry, I was skeptical at first, got it as a gift and fricking love it, even pairs well the the SNS
1. Craycort Castiron Grill grates. I know they rust easy but I grill on them about 3 or 4 times a week so I always have a fresh coat of oil on mine so I don't have a rusting problem. I do have a set of GrillGrate grill grates and I do like them also... but I like the cast iron better...
2. Slow 'n Sear - you absolutely don't need it but it makes everything a lot easier on the grill in my opinion from set up to clean up.
12 inch 45 degree pliers - best thing around for moving the grill grates and slow n sear around when things are hot!
