Just received the gateway in the mail today. I wasted no time and bought some ribs. Dinner won't be ready until 10 but I couldn't wait to try it out.

2.5 hours. Getting some nice pull back. Temp has been nailed around 300.

These were another level. I love my hot and fast two hour ribs but these had a much more complex flavor profile. The very bottom bone gets burned up but the rest of the racks are perfect from top to bottom. Just excellent and still only takes 2.5-3 hours depending on the rack.

And you wanted to sell your wsm! Wonder why you waited so long to get the hanging rack. Once you start hanging ribs , it's very hard to go back laying it flat. Did you wrap at all?
Looks perfect.
Those are some nice looking ribs

I never abandoned the concept. Selling was just going to free up space and fund a double stacker set up like yours. Which I still plan on getting.
Same reasons as you. Wider temp range and just an overall more versatile set up. This will have to hold me over for now.
I did not wrap. I spritzed with a mix of cranberry apple juice, cider vinegar, and water halfway through. I rotated the hanging rack 90 degrees every 30 minutes. Then sauced the last ten minutes. I used one unlit chimney of briquettes and one lit chimney or ro lump.
My wife really liked them and I took them to work this morning and shared with everyone and they were very impressed.
We love ribs for breakfast at my work.

Looks awesome! I have the same hanger and I haven't cooked ribs flat since November. I recently did two racks of spares and the smell of the smoke from the fat dripping on the coals was pig perfume. No wood smoke needed.

Interesting how you daisy-chained the hooks.

I was a little concerned about them coming apart and wanted reinforcement. Does everyone generally use one hook? I was already planning on getting 6 more hooks so I can do 6 racks.

Double hooking is similar to a catastrophic insurance policy... you don't often need it but you're glad you have it when you do. I've only lost one rack on a single hook but now always double up.

I've done just one and been fine. Hook two ribs in and keep it around 300 F cooking temp.

One hook is all you need between the 2nd and 3rd bone on the thicker end.

I hope so. I've got one hook in each this time. My plan is to wrap and cooler when finished and bring to a party.

To me, it tastes/smells like the ribs my dad made when I was a kid; it's very nostalgic. Believe it or not, some people don't like that flavor/aroma. I actually prefer doing a partial hang and then an indirect/wrapped finish. That's the one that pleases everyone.

Yep. As if by magic, they do not burn.
These turned out fantastic. I was short on time so the total cook time on the wsm was only 2:15. I then wrapped in foil and placed in a cooler with a towel where they continued to cook / rest another hour in transit and at the party. The smallest rack was cooked perfectly. I cut that one up and it was eaten immediately. I placed the other two racks in one of the many Weber's at his house to finish. (most of my friends and family have multiple Webers).

Ive got to get an ash sweep for the one I'm sending to my friends house. Other friends and family can expect webers for any birthday / Christmas presents from now on lol
