I'm not having a party and plan to freeze leftovers. It's more or less just for fun and practice. I've not cooked this quantity before. Started with a half a lit chimney and a full ring of kbb. All vents wide open for 2 hours now and temp is steady at 225. It will most likely go up to 250 once the meat warms. That quantity of meat has it running cooler than normal but I'm still impressed. I put these on this morning. I've got pork basting the brisket. Also a Christmas tree watering funnel and pitcher work nicely for filling the water pan. It keeps you far away so your not choking on smoke while filling.

Got them wrapped. I used a little apple juice with the pork and nothing on the brisket. I'm trying out butchers paper.

Completely wore out from processing meat. At least we will have pulled pork and brisket to use for whatever.

I used a serrated slicing knife. It was very tender and that knife tore it up a bit. I should have used a proper slicing knife.
Everything was perfectly tender and good but I was a little light on smoke flavor and seasoning on the brisket. Maybe I'll try oak next time?

I like having a stash of pork and brisket. Came home today and through some brisket in a skillet with some olive oil. Covered and got the meat warm than stirred in some bbq sauce. Quick, easy, and incredible.
