So I had an idea for a cheese smoker. But I didnt want to have to lift the lid to check the fire. It was trail and error but I eventually go it right for my WSM.

That pizza with a cold Shiner Bock is the bomb! I learned how to make gumbo from a coonass buddy of mine. Will post the recipe in whatever section it makes sense.
