I work the next few days and today is some beauty weather so I was up and to the Asian supermarket for meaty Angus beef ribs early. They were partially frozen still so I cut them into singles and put them on a metal tray in the sun after dusting with a combo of salt, pepper, paprika, chili powder, chipotle powder and granulated garlic.

RO and Kamado Joe lump is in a basket with black cherry and rum barrel wood for flavour.
Hopefully this isn't the last good day, but that slab of ribs up front looks incredible.
A little off subject and you can pm me if you rather, but can you tell me a little about that open pit in the background? I'd like to do that myself. Thanks Hoss

That is for sure. I saw people in shorts and flip-flops yesterday (Friday) ...
Supposed to get 5-10" of snow here tonight and into Sunday ... :-\ ??? >:(
Those look gorgeous!
Unfortunately, I think you're right about Friday being the last good day of the year for hanging around outside and cooking - it was gorgeous. Saturday, I drove home through blowing snow after playing a football game in Toronto and there was snow on the ground by the train tracks this morning when I went to work and I had to get the winter jacket out, which is probably what I'm going to be wearing while barbecuing until spring comes...
Great looking cook hoss
Love me some beef ribs. Check out that beautiful smoke ring! Nice job.
Wow, those look amazing. I might have to start wrapping my beef ribs...those sucker as JUICY!!!!
Dammit That looks GREAT!
Nice looking ribs!
