Couple things I should note - I increased the batch size so that I could have closer to 300g dough balls, and used an IPA beer (only) in the poolish instead water.

Looking good.  Your pics inspired me to put some mushrooms on a pizza over the weekend.  I'm the only one out of my normal pizza eating crew who likes them so I usually skip them.  Will post pics sometime today.
