Was looking for an excuse to use a newly acquired 22.5 WSM:
Beer can chicken sounds good:

Rubbed with my new favorite dry rub:

Lots of space to fill - some ABTs sound good. For filling, I used blue cheese, cream cheese, and cajun sausage:

Going to make a hash including grilled corn, grilled peppers, diced red potato, garlic, diced onion, and seasoning. Bisbee gets the call:

The payoff - Caprise salad (heirloom tomatoes are in season), bacon/blue ABTs, Cesar salad with homemade dressing (took me years to perfect), grilled corn hash, and dry rubbed beer can chicken, all washed down with a nice chardonnay. It was a nice dinner with Mrs Winz on the deck enjoying the evening.

Great job on the cook Winz. I have yet to use my ceramic chicken stand. How much charcoal and how long did it take for the chicken to cook. Everything looked awesome.
Nicely done sir! I like that you used a WSM and a kettle for one meal.
"Good lord this thing is big!"
22-1/2" isn't all THAT big....... 8)
Grate Lookin' Cookup.......I could actually sense the gentle breeze across the veranda from your description !!!!
How did you like the blue cheese in the ABT? We tried it awhile back and found it a little sharp using a Roquefort. Also had 1/2 the batch with cream/blue cheese with a granny smith apple. Trying to cut the "twang" with a little sweetness
Yummmmmm

Jimmy - I mixed the cream cheese, blue cheese, and sausage together before stuffing the ABTs - this allowed me to moderate how much blue cheese taste went into the turds. I love blue cheese, so I used a lot. Strong bacon/blue was the taste profile I was shooting for. I like your apple idea - a new texture with some sweetness. Another idea would be candied pecans - crunchy and sweet.

Oh, the hash is a great way to enjoy all the summer corn we have.
A secret Caesar salad dressing? Might need to ask for that! 8)
