Last night I wanted to try a recipe posted by a friend of mine on another forum and from the moment the result was amazing I want to share with you ..
ingredients:
1 kg of lamb into pieces
Extra virgin olive oil
Salt and pepper
Sage, bay leaves and fresh rosemary
2 cloves of garlic
1/2 cup white wine
some anchovies
vinegar
In the cast iron skillet I put the lamb with olive oil, garlic thinly sliced, a sprig of rosemary, sage and bay leaf and cooked with the direct method for about 55 minutes total and I smoked for most of the time with pecan chips. Towards the end I made a sauce with anchovies, half a clove of crushed garlic and very little vinegar and let cook for another fifteen before taste. I have no words to describe the taste I only say that it was the best lamb ever eaten before ... try it because it is a very simple preparation that gives a very special taste!
